Italian White Bean Salad with Pepperoni

2 - 15oz. cans Great Northern beans, drained and rinsed
1 1/2 cup Sugardale diced pepperoni
1/2 cup red onion, chopped
1/3 cup flat leaf parsley, chopped
2/3 cup green bell pepper, chopped
1 cup seedless cucumber, diced
1/2 cup sliced black olives
1/2 cup tomato, diced
1/4 cup olive oil
3 Tbsp. red wine vinegar
Salt & pepper, to taste
1. Combine all vegetable ingredients together in a large mixing bowl. Lightly
season with salt and pepper.
2. In a small bowl, whisk together the vinegar and oil to form a light
vinaigrette. Season with salt and pepper.
3. Pour the vinaigrette over the vegetable salad and toss well to coat. Mix in
the diced pepperoni. Chill before serving.
